Cocoa Mocha Layer Cake
Ingredients
(A)
250g butter
150g sugar
14 egg yolks
5 tbsp condense milk
(B)
150g sugar
7 egg white
1/4 tsp cream of tartar
(C)
160g Hong Kong flour
40g horlick
1 tsp baking powder
(D)
a) 1/4 tsp yellow colouring + 1 tsp vanilla essence
b) 1 tbsp mocha emulco - I used mocha latte paste
c) 1/2 tbsp chocolate emulco + 2 tbsp cocoa powder (valrhona) + 3 tbsp hot water - mix everything into paste
Preheat oven 175C for 15 mins.. greased 8x8" pan

Preheat oven 175C for 15 mins.. greased 8x8" pan
Method
- A : Whisk butter, sugar and condensed milk till white and creamy. Add in egg yolks one at a time and continue to whisk till well combined - set aside.
- B : In another bowl.. whisk egg white with cream of tartar till bubbly.. add in sugar a little at a time till soft peak.
- C : Fold in carefully sifted flour, horlicks and baking powder into A.
- Once mixed add in B and mix till well blended.
- Divide batter into 3 portions.. one part add in D(a).. Add in D(c) mixture into the 2nd portion and lastly add in D(b) into the last portion.
- Every layer weigh 76g and takes 7 mins to bake using upper fire (grill).
- You know the typical procedure right.. grill all the chocolate portion first.. each layer u hv to press it and brush it with melted butter. once ur done with chocolate portion u continue with mocha portion and lastly u use yellow portion..
- Bake last layer using upper and lower fire for 15 mins.

Nutella Layer Cake
Bahan-Bahan
500 gm mentega
180 gm gula
1 sudu teh ovellette
10 biji telur (saiz besar)
1 tin (397gm) susu pekat manis
260 gm tepong Hong Kong
100 gm horlicks
220 gm Nutella
180 – 200gm Nutella untuk di bubuh pada lapisan kek (lebih pun takpe, sedapp..)
Cara:
- Pukul mentega, gula dan ovalette sehingga kembang (kira-kira 10 minit).
- Masukkan telur sebiji demi sebiji sambil terus pukul (kira-kira 7-8 minit)
- Perlahankan speed mixer, bubuh susu pekat manis dan terus pukul.
- Seterusnya, kurangkan kelajuan mixer hingga ke paras paling perlahan (rendah) lalu masukkan tepung HK dan horlicks sedikit demi sedikit. Pukul hingga sebati dan rata.
- Bahagikan adunan kpd 2 bahagian. Satu bahagian dibiarkan plain. Yg satu lagi dibubuh Nutella dan dikacau rata.
- Bakarlah selapis selapis. Pada setiap lapisan cokelat, bubuh lagi Nutella (dgn menggunakan sudu, biarkan ia jatuh sedikit-sedikit di atas lapisan kek.
- Bakar sehingga selesai adunan dgn anggaran suhu 180 – 210 darjah Celsius (mengikut kesesuaian oven anda).
