Triple Chocolate Muffins


140g Plain Chocolate
375g Self Raising Flour
1 tbsp baking powder
55 g Cocoa Powder
85g Caster Sugar
2 eggs
2 tsp vanilla extract
6 tbsp sunflower oil
375 ml Milk
140g Milk chocolate, roughly chopped
140g White chocolate, roughly chopped

  1. Preheat oven 200 C
  2. Melt the plain chocolate in a bowl over a pan of simmering water.
  3. Stir flour, baking powder and cocoa into a medium bowl and stir in the sugar.
  4. Separate bowl, beat the eggs, vanilla, oil & milk. Stir in the melted chocolate.
  5. Stir the chocolate mixture into the flour and add chopped chocolate.
  6. Do not beat - stir only until the mixture comes together.
  7. Bake 20 - 25 minutes.
